Tomatillo & Hatch Chile Bacon Relish
1½ Cucumbers (seeded and diced)
½ Medium Red Onion (diced)
4 Large Tomatillos (paper skin removed and diced)
1 cup Yellow and Red Cherry Tomatoes (quartered)
1/3 cup Robert Rothschild Farm Roasted Hatch Chile & Bacon Sauce
¼ bunch of Fresh Parsley (roughly chopped) -- optional
Salt to taste
In a bowl, add cucumbers, red onion, tomatoes, and tomatillos and mix well.
Add the Robert Rothschild Farm Roasted Hatch Chile & Bacon Sauce to the vegetables.
Season with salt and fresh parsley as desired.
Cover bowl and allow to sit over night for the best flavor development.
Serve as a fresh sandwich side, tossed into a salad, dressed over smoked trout and grilled salmon or as a standalone chunky salsa.
Pro Tip: If you enjoy a relish with more crunch, serve immediately after preparing. Like it softer? Allow the mixture to marinate in the sauce for a day or two prior to use.
