Ginger Wasabi Chilled Noodle Salad

2 oz.                Brown rice noodles, broken in half                                        

3                      Green onions, sliced                                      

1 head             Napa cabbage, shredded                                          

1                      Red bell pepper, thinly sliced                                     

1 cup               Snow peas, ends trimmed and strings removed, thinly sliced diagonally     

1/2                   English cucumber, diagonally sliced                                      

1 cup               Edamame                                           

1/4 cup            Cilantro, chopped                                           

1 Tbsp.            Soy sauce                                          

1/2 cup            Robert Rothschild Farm Ginger Wasabi Sauce

 

Break rice noodles in half and prepare according to package directions. Keep noodles in cold water if not using immediately to prevent them from sticking. Prepare edamame according to package directions and cool. In a large bowl, combine noodles and vegetables. Stir in Ginger Wasabi Sauce and soy sauce. Serve chilled.
