STUFFED BAKED LOBSTER
2 Lobsters, 1-1 1/2 lbs.
1 Tbsp. Robert Rothschild Farm Ginger Wasabi Sauce
2 tsp. Lemon juice
2 Tbsp. Red onion, finely diced
1 Tbsp. Green onion, finely diced
1/4 cup Artichoke hearts, finely diced
1/4 cup Spinach leaves, chopped
1/4 cup Monterey Jack cheese, grated
1/4 – 1/2 cup Breadcrumbs
Salt and pepper to taste
Cook lobsters in boiling water for 10 minutes per pound. Remove when cooked and let cool. Cut lobster in half lengthwise and remove lobster meat. Remove claw meat. Clean out halved shells and set aside. In bowl, mix chopped lobster meat and remaining ingredients. Stuff lobster halves with lobster mixture. Sprinkle top lightly with some breadcrumbs. Place stuffed lobsters in pre-heated 400 degrees F oven for about 10 - 15 minutes until mixture is thoroughly cooked and slightly browned.
