Broccoli Cheese Soup with Pepper & Garlic Swirl

1/2 jar Robert Rothschild Farm Organic Pepper & Garlic Dip
2 heads Broccoli, chopped
2 cups Cheddar, shredded
1/2 cup Sour cream
2 Tbsp. Butter
2 Tbsp. Flour
2 Tbsp. Sea salt + more to taste
2 cups Cooking water
1/4 cup Extra-virgin olive oil (Optional)



Fill a medium sauce pan half full with water, and add salt. Bring to a light simmer. Add broccoli and simmer until tender and bright green in color. Save two cups of cooking water and strain broccoli well. Melt 2 tablespoons of butter in a large (4-quart) pot and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. While whisking, add the reserved cooking water and cook for a minute or two more, until thickened and smooth. Return broccoli mixture and shredded cheese to the sauce pan and bring to a simmer. Use an immersion blender to blend to desired consistency. With the immersion blender on, drizzle in olive oil for a very smooth soup. Salt to taste.  Serve swirled with dollops of sour cream and Organic Pepper & Garlic Dip.
