Asian Honey Salmon en Papillote


4 Salmon fillets

2 Carrots, thinly sliced

2 Bell Peppers, thinly sliced

1/4 lb. Snow Peas

1 can Baby Corn Cobs

1/2 cup Green Onions, chopped

1 bottle Robert Rothschild Farm Asian Honey Barbecue Sauce

2 cups Rice, steamed


Cut 4 pieces of parchment paper to approximately 12”x18” each. Arrange a bed of carrots, peppers, corn, and peas roughly the size of the fillets on one side of each parchment paper. Place the salmon fillets atop the beds. Pour 1/4 of the bottle of Robert Rothschild Farm Asian Honey Barbecue Sauce over each salmon fillet. Top each fillet with green onions. Fold the bare side of the parchment paper over the salmon so that the edges meet.  Roll up and crimp the three open sides several times each to form a sealed pouch. Bake at 400°F for approximately 15 minutes, or until cooked to desired doneness.

Unwrap, and serve with rice.
