I dearly love the Roasted Pineapple & Habanero Sauce – I have a quick dinner that everybody loves AND can be put together in minutes. So much better than heavy takeout. I boil chicken breasts for about 10 minutes. Cool, and then shred them into small strips, pull apart, don’t cut, and then put in a freezer bag. Good anytime I need a good, quick easy and tasty meal. I start a pot of rice. I thaw out a handful of chicken and crisp it up in some olive oil. Throw in whatever veg I have in the fridge: broccoli, beans, carrots, bok choy, whatever and let heat. Then pour in the Roasted Pineapple/ Habanero Sauce. Stir well Put some rice on each plate and a portion of this stir fry and everybody is standing in line. Every time. No matter how late you get home, this recipe is fast AND a winner.
Makes any grilled pork, salmon, chicken and shrimp stand out in the crowd. Guareenteed hit and so easy!
