Quick Schnitzel with Hot Cherry Merlot Sauce

(4) 3 oz.           Pork cutlets, tenderized

1 cup               Panko breadcrumbs

                        Avocado oil for frying

1/4 cup            Robert Rothschild Farm Organic Hot Cherry Merlot Dip

4                      Lemon wedges

            Salt and pepper (to taste)


Place a deep 12-inch sauté pan over medium heat. Add enough oil so that you have about 1/4-inch of depth. Place the breadcrumbs in a large dish, and season with salt and pepper. With the heel of your hand, press the pork cutlets (one at a time) firmly into the breadcrumbs.  Fry the pork in the oil for about 2 minutes per side, or until a deep golden brown. Remove from the pan and drain over a paper towel. Slice the pork, plate, squeeze the lemons over each one and drizzle with the Organic Hot Cherry Merlot Dip.
