Pepper & Garlic Stuffed Mushrooms

Serves:  4 - 6



1/4 lb. Flank steak, shaved thin
20 Button mushrooms, cleaned and stemmed
4 oz. Blue cheese, crumbled
1/3 cup Robert Rothschild Farm Pepper & Garlic Dip, with additional for serving
1 tsp. Salt
1 tsp. Chili powder
1 tsp. Garlic powder
1/4 cup Parsley, chopped
2 tsp. Olive oil



Mix salt, chili powder, garlic powder, and rub into steak. Grill steak to desired doneness, allow to rest and roughly chop. Heat olive oil in a skillet over medium heat. Sauté mushrooms in skillet until soft, about 10 minutes. Mix together steak, blue cheese crumbles, 1/3 cup of Pepper & Garlic Dip, and stuff into mushrooms. Place in oven and broil 2 - 3 minutes until cheese is melted. Pour remaining dip onto the plate and arrange mushrooms on top. Garnish with parsley.
