CHILI & CILANTRO CHICKEN BURGERS
Chicken burgers loaded with mushrooms and Chili & Cilantro Dip then topped with veggies and slaw made with a homemade mayo and chili cilantro slaw sauce.

Ingredients1 lb. Ground chicken
1/2 cup Robert Rothschild Farm Chili & Cilantro Dip
1/2 cup Shitake mushrooms, minced
2 cups Cabbage, shredded
1/4 cup Robert Rothschild Farm Chili & Cilantro Dip
1 Tbsp. Mayonnaise
1/2 cup Carrots, matchsticks
1/2 cup Cucumber, sliced thin
Preheat a grill pan over medium-high heat and lightly oil. Mix 1/2 cup Chili & Cilantro Dip with ground chicken and minced mushrooms. Take 1/4 of the mixture and spread into a burger shape (This will be very wet. This step cannot be prepped ahead of time). Place burger directly into heated pan. Repeat 3 more times. After about 2 minutes, take a large spatula and gently press each burger to flatten. After 5 minutes, flip burgers and cook until done, about 5 more minutes. Meanwhile in a medium bowl whisk together 1/4 cup of Chili & Cilantro Dip and mayonnaise. Add shredded cabbage and mix to coat. Assemble burger with bottom bun, burger, cucumbers, carrots, slaw, then top with bun.
