LAYERED MEXICAN DIP

HATCH PINEAPPLE CHIMICHURRI SAUCE

1 3/4 cups Refried beans
2 medium Avocados, peeled and diced
1 3/4 cups Robert Rothschild Farm Hatch Pineapple Chimichurri Sauce
1/4 cup Sour cream
1 lb. Ground beef
1 pkg. Taco seasoning
1 cup Cheddar cheese, shredded
1/2 cup Black olives, sliced
Green onions, sliced, optional
Tomatoes, chopped, optional
Jalapeño peppers, optional
Tortilla Chips

 

In a skillet over medium-high heat cook ground beef with taco seasoning according to package directions and drain fat once fully cooked. Spread refried beans over bottom of 8-inch serving dish. Spread seasoned ground beef over beans. Combine avocados, 1/4 cup Hatch Pineapple Chimichurri Sauce and sour cream into small bowl, blend well. Spread avocado mixture over seasoned ground beef. Top with remaining Hatch Pineapple Chimichurri Sauce, cheese, jalapeños, black olives, green onions, and tomatoes. Serve with tortilla chips.

Note: 1 bottle of Hatch Pineapple Chimichurri Sauce equals about 1 cup.
