Hot Pepper Peach Muffins


Sweet and moist breakfast muffins studded with our Hot Pepper Peach Preserves. Great for breakfast, brunch, or a snack!



2 cups Flour
1/2 cup Brown sugar
2 Tbsp. Baking powder
1/2 tsp. Baking soda
1/2 tsp. Salt
1/2 cup Sour cream
1/2 cup Vegetable oil
2/3 cup Robert Rothschild Farm Hot Pepper Peach Preserves
1 Egg



Preheat oven to 400 degrees F. Mix together flour, brown sugar, baking powder, baking soda and salt until blended. In another bowl, combine Hot Pepper Peach Preserves, sour cream, oil and egg. Add liquid mixture to the dry ingredients. Stir just until all the flour is absorbed. Do not overmix. Fill greased 12 cup muffin tin 2/3 full with batter. Bake for approximately 20 minutes or until muffins are lightly browned. Cool slightly and serve warm.
