Greek Salad


A crunchy Greek salad loaded with toppings and drizzled in a homemade Roasted Red Pepper & Onion dressing.

1/2 cup Robert Rothschild Farm Roasted Red Pepper & Onion Sauce
2 Tbsp. Red wine vinegar                                         
1/2 cup Olive oil                                              
Salt and pepper to taste                                       



1 head Romaine, chopped                                        
1 Cucumber, chopped                                      
1 pint Cherry tomatoes, sliced                                             
15 oz. can Chickpeas, drained, rinsed                                        
8 oz. Feta cheese, crumbled                  
1/4 cup Kalamata olives, sliced 



Add the first four ingredients to a food processor or blender. Blend together for 30 seconds and set aside. Spread lettuce on a platter, top lettuce with remaining five ingredients, and pour vinaigrette over the salad right before serving. Enjoy!
