Roasted Portabella Bowtie Pasta and Grilled Salmon

ROASTED PORTABELLA BOWTIE PASTA AND GRILLED SALMON

1                      Red bell pepper, cut julienne

1                      Yellow bell pepper, cut julienne

1                      Red onion, cut julienne

1 lb.                 Bowtie pasta, cooked

                        Olive oil

1 jar                 Robert Rothschild Farm Roasted Portabella & Roma Tomato Pasta

                        Sauce

4                      Salmon fillets, 8 oz. each

1/4 cup            Parmesan cheese

 

Brush salmon with olive oil, season with salt and pepper, and grill until desired doneness. Sauté peppers and onions in olive oil over medium-high heat. Add pasta sauce and toss with warm pasta. In a serving dish, place pasta and top with sautéed peppers and onions. Place salmon on top of and garnish with Parmesan cheese.

 

Serves 4.
