Herbed Pork Tenderloin with Cranberry Sauce

HERBED PORK TENDERLOIN WITH CRANBERRY SAUCE

Cook Time: 15 minutes
Serves: 4

Ingredients
1 lb                 Pork tenderloin
1/4 cup           Gorgonzola cheese
1 tsp               Herbs de Provence
Salt & pepper to taste
1 to 2 Tbsp    Extra Virgin Olive Oil, as needed
1 cup              Robert Rothschild Farm Cranberry Sauce

 

Instructions

Slice pork into 1 inch medallions. Mix Herbs de Provence with salt & pepper. Season both sides of pork with seasoning. Heat a large skillet over Medium-High heat, sear medallions 3 minutes per side. Baste with Robert Rothschild Farm Cranberry Sauce while still in the skillet; reduce heat to low and cook until sauce reduces. Top with cheese. Serve while hot.
