SRIRACHA TERIYAKI LETTUCE WRAPS
These yummy Asian-inspired lettuce wraps can be served as a fun “assemble your own” appetizer or pre-assembled as a main course meal.
1 head Boston lettuce
1/2 cup Chow Mein noodles/ rice noodles, fried
1/4 cup Peanuts, chopped
1 bag Carrots, shredded
1 (8 oz.) pkg. Bean sprouts
1 1/2 lbs. Chicken thighs, boneless, skinless, diced
1 Cucumber, shredded
1 bunch Green onions, sliced
1 cup Robert Rothschild Farm Sriracha Teriyaki Organic Sauce or Sriracha Teriyaki Sauce divided
Grill chicken thighs over medium heat, baste with Sriracha Teriyaki Sauce (1/4 cup). Slice chicken thighs thinly, toss with more Sriracha Teriyaki Sauce (approx. 1/4 cup). Coarsely chop peanuts, sprinkle on top of chicken. Layer approximately 1 – 2 teaspoons of each ingredient along the crease of each lettuce leaf. Roll the leaf to secure the ingredients. Secure with a toothpick, and repeat. Serve with extra Sriracha Teriyaki Sauce for dipping.
