Yellow Squash Kabobs

A delicious kabob recipe featuring our Fennel Herb Pork & Beef Rub.

Ingredients

  • 4 Yellow squash
  • 1 medium White onion
  • 2 medium Red potatoes
  • Olive oil
  • Fresh parsley, finely chopped
  • 1 jar Robert Rothschild Farm Fennel Herb Pork & Beef Rub
  • Seasoned salt
  • Black pepper
  • Directions
    1. Cut the vegetables into pieces about one inch square. Leave the skin on the squash and the potatoes.
    2. Skewer the veggie chunks, then coat with olive oil and season with salt and pepper.
    3. Grill over medium heat for a couple of minutes per side (two sides) and then brush with more olive oil and sprinkle with Fennel Herb Pork & Beef Rub. Continue grilling for another 2-4 minutes per side.
    4. Remove to a plate and top off with the chopped parsley.
