Wilted Escarole

This wonderful appetizer of escarole, pine nuts, bacon and Gourmet Dipping Oil is perfect for any get together.

Ingredients

  • 1 large Head of escarole
  • 3 Tbsp. Robert Rothschild Farm Gourmet Dipping Oil
  • 1 tsp. Garlic, minced
  • Salt and pepper to taste
  • 2 Tbsp. Pine nuts
  • 4 strips Bacon, crumbled, chopped
  • Directions
    1. Separate escarole leaves and rinse thoroughly to clean under running water. Bring a large pot of water to boil and place escarole leaves into pot. Cover and let boil 10-12 minutes. Remove from heat, drain into sieve and let dry.
    2. Heat Gourmet Dipping Oil in a large frying pan. Add garlic and sauté for 30 seconds. Chop the escarole and add to frying pan. Season with salt and pepper and cook for about 5-6 minutes until tender.
    3. Add pine nuts and cook for 1-2 minutes until lightly toasted. Garnish with some chopped bacon and serve.
