White Bean Salad

A tasty salad featuring our Pink Peppercorn Dressing alongside radicchio lettuce, shiitake mushrooms and cannellini beans.

1. Quarter the half head of radicchio lettuce. Brush radicchio and shiitake mushrooms with olive oil and season with salt and pepper. Grill on a preheated grill until mushrooms are tender. Remove from grill and set aside to cool.
2. Dice the cooled mushrooms and radicchio. Drain and rinse the cannellini beans. Place beans in a large mixing bowl and add the mushrooms, radicchio and Pink Peppercorn Dressing. Season with salt and pepper and serve.
