Tuscan Grilled Vegetable Casserole

A wonderful vegetable casserole featuring zucchini, summer squash, artichoke hearts, parmesan cheese, breadcrumbs and our Tomato Vodka & Sweet Basil Soup.

Ingredients

  • 2 cups Robert Rothschild Farm Tomato Vodka & Sweet Basil Soup
  • 1 Zucchini, sliced
  • 1 Summer squash, sliced
  • 12 oz. Artichoke hearts, drained, quartered
  • 1 cup Parmesan cheese
  • 1 cup Breadcrumbs, Japanese style
  • Directions
    1. In a lightly greased casserole dish, layer all ingredients, reserving 1/4 of the breadcrumbs and 1/4 of the parmesan cheese for later use. Bake at 350 degrees F for 1 hour.
    2. Top with remaining cheese and breadcrumbs and return to oven for 15 minutes.
