Tomatillo Corn Fritters

These tasty corn fritters are given added flavor from our Tomatillo & Pepper Salsa.

Ingredients

  • 14.75 oz. Creamed corn
  • 1 1/2 cups Corn kernels, whole
  • 1 Egg
  • 3/4 cup Robert Rothschild Farm Tomatillo & Pepper Salsa
  • 2-2 1/2 cups Flour
  • 2 tsp. Baking powder
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Directions
    1. In a large mixing bowl, combine all the ingredients except the oil. However, add flour slowly until batter is fairly thick for dropping into oil (not thin like pancake batter).
    2. Fill a large frying pan with vegetable oil to about half an inch high (or use a deep fryer). Once oil is hot, use a 1/4 cup measuring cup to drop batter into oil. Cook for 1-2 minutes until lightly browned. Flip and cook an additional 1-2 minutes on other side. Drain cakes on a plate lined with paper towels. Serve warm with some maple syrup.
