Stuffed Tomatoes

Tomatoes are stuffed with a mixture of ricotta cheese, goat cheese, onion, olives and our Chop House Steak & Beef Rub.

Ingredients

  • 3/4 cup Ricotta cheese
  • 4 oz. Goat cheese
  • 1/4 cup Red onion, diced fine
  • 1/4 cup Green olives, diced fine
  • 2 tsp. Robert Rothschild Chop House Steak & Beef Rub
  • 6 medium Tomatoes, vine ripened, yellow or red
  • 2 Tbsp. Butter, melted
  • 1/3 cup Breadcrumbs
  • Directions
    1. In a large mixing bowl, combine the ricotta cheese, goat cheese, onion, olives and Chop House Steak & Beef Rub. Slice tomatoes in half. Use a melon baller to scoop seeds and some pulp out of inside of tomato to create a cavity. Spoon cheese mixture into tomato.
    2. In a separate bowl, mix together melted butter and breadcrumbs. Sprinkle breadcrumb mixture over the cheese stuffed tomatoes. Place tomatoes in a baking dish and bake in a 350 degrees F oven for 25-30 minutes.
