Shrimp Bruschetta Rounds

These tasty little appetizers feature our Roasted Red Pepper Bruschetta Topping.

Ingredients

  • Vegetable oil
  • 1 package Wonton or egg roll wrappers
  • 1 Tbsp. Olive oil
  • Shrimp, peeled, deveined, diced
  • Salt and pepper to taste
  • 1 jar Robert Rothschild Farm Roasted Red Pepper Bruschetta Topping
  • Fresh basil, minced
  • Directions
    1. Heat oil to 365 degrees F in a deep fryer or large frying pan. Cut wonton wrapper into 2 inch round circles using a biscuit cutter or knife. Fry wonton wrappers until lightly browned and crisp.
    2. Heat olive oil in a separate sauté pan. Season shrimp with salt and pepper and sauté until they turn pink (cooked and still tender).
    3. To assemble, spread a little Roasted Red Pepper Bruschetta Topping on each fried wonton round. Place a little mound of sautéed shrimp on top of Roasted Red Pepper Bruschetta Topping. Top with some minced basil.
