Salmon with Wasabi Dressing Mashed Potatoes

Salmon is served with mashed potatoes featuring Raspberry Wasabi Dressing.

Ingredients

  • 1 Cedar plank
  • As needed Olive oil
  • 1/3 cup Soy sauce
  • 1/3 cup Robert Rothschild Farm Raspberry Wasabi Dressing
  • As desired Salmon filets
  • Salt and pepper to taste
  • 5 Yukon Gold potatoes
  • 1/2 cup Heavy cream
  • 2 Tbsp. Butter, unsalted
  • 1/4 cup Robert Rothschild Farm Raspberry Wasabi Dressing
  • Directions
    1. For Salmon: Preheat oven to 400 degrees F. Brush cedar plank generously with olive oil. In a small bowl, whisk together soy sauce and Raspberry Wasabi Dressing. Marinate salmon in soy mixture for 20-30 minutes. Sprinkle salmon filets with salt and pepper. Place salmon filets on cedar plank and roast in oven for about 10 minutes per|n| inch.
    2. For Potatoes: Boil potatoes with jackets on for approximately 30 minutes or until fork can be inserted easily into potato. Drain/remove potatoes and mash in mixing bowl. Add cream, butter, Raspberry Wasabi Dressing and salt/pepper to mashed potatoes - mix well.
    3. To serve: Place a heaping portion of mashed potatoes in the middle of a plate. Place finished filet on top of potatoes. Add a side of roasted vegetables such as sautéed spinach.
