Rothschild's Farmhouse Raspberry Shortcake

A wonderfully delicious shortcake recipe featuring our Red Raspberry Gourmet Sauce.

Ingredients

  • 2 cups Flour, sifted
  • 2 Tbsp. Sugar
  • 2 tsp. Salt
  • 4 tsp. Baking powder
  • 1 quart Fresh raspberries
  • 8 Tbsp. Butter
  • 1 3/4 cups Milk
  • 2 bottles Robert Rothschild Farm Red Raspberry Gourmet Sauce
  • 2 cups Heavy cream, divided
  • Fresh mint for garnish
  • Directions
    1. Preheat oven to 450 degrees F. In a mixing bowl, combine the sifted flour, sugar, salt and baking powder. Using a pastry blender cut in the butter until the mixture looks like ""meal."" Stir in the milk, just enough to make a soft dough. Place dough on a lightly floured board and knead lightly. Dot with the remaining 2 tablespoons butter and sprinkle with sugar. Bake in preheated oven for 12-15 minutes. Remove to a cooling rack and cool to warm.
    2. Combine 1 jar Red Raspberry Gourmet Sauce with the quart of fresh raspberries. Reserve. In a large mixing bowl, beat 1 cup of cream until it almost reaches the butter state. Cut shortcake in half, horizontally. Spread each inside half with "whipped butter." Place 1/2 the red raspberries between the two layers of shortcake.
