Red Pepper Bruschetta Soup

A unique soup recipe featuring our Roasted Red Pepper Bruschetta Topping.

Ingredients

  • 2 cups Chicken stock
  • 1 jar Robert Rothschild Farm Roasted Red Pepper Bruschetta Topping
  • Salt and pepper to taste
  • 6 Fresh basil leaves
  • 1/2 cup Sour cream
  • 1/4 cup Whipping cream
  • Directions
    1. Bring chicken stock to a boil in a medium saucepan. Reduce heat to bring stock to simmer. Whisk in the Roasted Red Pepper Bruschetta Topping and season with salt and pepper. Simmer for an additional 5 minutes. Meanwhile, place basil leaves, sour cream and whipping cream in a food processor and puree for 2 minutes. Ladle soup into individual bowls and drizzle with the basil cream mixture.
