Raspberry Tiramisu

A decadent tiramisu recipe featuring our Raspberry Dressing.

Ingredients

  • 1 1/2 cups French vanilla coffee
  • 1/2 cup Chocolate morsels
  • 1/3 cup Robert Rothschild Farm Raspberry Dressing
  • 7 Egg yolks
  • 1/2 cup Sugar
  • 1/3 cup Sweet Marsala
  • 8 oz. Mascarpone
  • 1 cup Heavy cream
  • 1 Tbsp. Creme de cassis
  • 3 Tbsp. Powdered sugar
  • 2 packages Fresh raspberries
  • 1/3 cup Sugar
  • 1 Lemon, juiced
  • 2 Tbsp. Robert Rothschild Farm Raspberry Dressing
  • 40-50 Ladyfingers
  • As needed Cocoa powder
  • Directions
    1. Brew French vanilla coffee. In small saucepan, mix coffee, chocolate morsels and Raspberry Dressing together and bring to simmer. Remove from heat and allow to cool.
    2. In large mixing bowl, whisk together the egg yolks, sugar and sweet Marsala. Place saucepan over saucepan of boiling water to create a double boiler. Continue whisking mixture until heated and double in volume. Mixture should be fluffy.
    3. Remove from heat and whisk in mascarpone. Add heavy cream, powdered sugar and Crème de Cassis to mixer. Whisk to create whipping cream with stiff peaks. Fold whipped cream into egg/marscapone mixture until completely combined.
    4. In mixing bowl, combine raspberries (reserve a few for garnish), sugar, lemon and Raspberry Dressing. Mash raspberries as you combine mixture.
    5. Dip ladyfingers quickly into coffee mixture and layer on bottom of baking pan or other deep dish. Spread layer of raspberry mixture on top of ladyfingers. Spread layer of cream mixture over raspberries. Repeat process at least two more times to form layers. Top with fresh raspberries and chill in refrigerator overnight. Slice and garnish with raspberries and powdered cocoa.
