Raspberry Muffins

A delicious muffin recipe featuring our Red Raspberry Gourmet Sauce.

Ingredients

  • 2 Eggs, well beaten
  • 1/2 cup Vegetable oil
  • 1/2 tsp. Vanilla
  • 1/2 tsp. Almond extract
  • 1/2 tsp. Salt
  • 1 2/3 cups Flour
  • 1/2 tsp. Baking powder
  • 1/2 tsp. Baking soda
  • 1 1/2 cups Robert Rothschild Farm Red Raspberry Gourmet Sauce
  • 1/2 cup Nuts, chopped, optional
  • Directions
    1. Mix eggs, vegetable oil, vanilla, and almond extract. Drain 2 tablespoons juice of Red Raspberry Gourmet Sauce. Mix remaining Red Raspberry Gourmet Sauce and dry ingredients together. Add nuts.
    2. Cream cheese may be layered into the middle of the muffins as they are being poured into greased muffin tins.
    3. Bake at 350 degrees F for 15-20 minutes. Makes about 12-15 muffins. Mix the 2 tablespoons of juice with about 3/4 cups powdered sugar to make glaze. Spread glaze over muffins while muffins are still warm.
