Potato Horseradish Pot Pie

A hard-to-resist pot pie recipe featuring our Onion Blossom Horseradish Potato Soup.

Ingredients

  • 1 lb. Chicken breast, cubed
  • 2 Tbsp. Flour
  • 2 oz. Butter
  • 2 cups Onions, carrots, celery, diced small
  • 3 cups Robert Rothschild Farm Onion Blossom Horseradish Potato Soup
  • Salt and pepper to taste
  • 1 sheet Puff pastry
  • Directions
    1. Lightly toss chicken breast in flour. Melt butter in a saucepan over medium-high heat and add vegetables. Sauté for 1 minute.
    2. Add chicken to butter and sear until golden brown, about 3 minutes. Add Onion Blossom Horseradish Potato Soup. Stirring throughout, slowly bring to a boil and reduce heat.
    3. Simmer 30 minutes. Stir occasionally to prevent sticking. Add salt and pepper to taste.
    4. Cut puff pastry to desired size, insert soup mixture, sprinkle with salt and pepper and bake per instructions.
