Peter Rabbit Carrot Salad

This tasty easter salad contains carrots, cranberries, oranges, coconut, pineapple chunks, sour cream and Hot Pepper Peach Preserves.

Ingredients

  • 2 cups Carrots, grated
  • 1/2 cup Cranberries, dried
  • 1 can Mandarin oranges, drained
  • 1 cup Coconut
  • 1 cup Pineapple chunks, drained
  • 8 oz. Sour cream
  • 1 can Mandarin oranges, drained
  • 1/4 cup Robert Rothschild Farm Hot Pepper Peach Preserves
  • Directions
    1. In a large bowl, combine the carrots, cranberries, oranges, coconut, pineapple chunks, sour cream and Hot Pepper Peach Preserves. Mix well and chill thoroughly. Keep refrigerated until ready to serve.
