Pasta with Zucchini & Pine Nuts

This delicious pasta dish features zucchini, onion, Italian parsley, parmesan cheese and our Artichoke Pasta Sauce.

Ingredients

  • 8 oz. Pasta
  • 1 Tbsp. Olive oil
  • 3 medium Zucchini, ends removed and cut into 1/2 inch slices
  • 1/2 cup Onion, sliced
  • 1 Tbsp. Oregano, chopped fresh
  • 2 Tbsp. Fresh Italian parsley, chopped
  • 1 jar Robert Rothschild Farm Artichoke Pasta Sauce
  • 1/3 cup Parmesan cheese
  • 1/3 cup Pine nuts, toasted
  • 4 oz. Mozzarella cheese, shredded
  • Directions
    1. Place pasta in boiling salted water and cook according to package directions. Drain pasta. Keep warm.
    2. Heat olive oil in a medium sized sauce pan over medium high heat. Add zucchini and onion slices. Saute until vegetables are lightly browned.
    3. Combine pasta, vegetables, herbs, Artichoke Pasta Sauce, Parmesan cheese and pine nuts in an oven-proof serving dish. Top with mozzarella cheese and place in a warm oven for a few minutes for cheese to melt. Garnish with fresh herbs and a few pine nuts.
