Pasta Primavera

Ingredients

  • 1 Red pepper, julienne
  • 1 Yellow squash, julienne
  • 1 Zucchini, julienne
  • 1/2 cup Red onion, roughly diced
  • 1 Carrot, thinly sliced
  • 1 Tbsp. Robert Rothschild Farm Gourmet Dipping Oil
  • Salt and pepper to taste
  • 3/4 lb. Farfalle pasta
  • 1/2 cup Peas
  • 1/2 cup Cherry tomatoes, halved
  • 2 Tbsp. Robert Rothschild Farm Gourmet Dipping Oil
  • 2 tsp. Cilantro, minced
  • 1/4 cup Parmesan cheese, grated
  • Directions
    1. Toss the red pepper, squash, zucchini, red onion and carrot together with Gourmet Dipping Oil in a large mixing bowl. Season with salt and pepper.
    2. Place on a parchment lined baking sheet and roast in oven for 18-20 minutes at 325 degrees F. Vegetables should still have some bite (slightly firm).
    3. Meanwhile, boil a large pot of water for pasta. Add pasta and cook for 12-14 minutes until al dente. Add peas and cherry tomatoes to pasta and blanch for 30-45 seconds. Then drain into colander.
    4. Add pasta and roasted vegetable mixture back to pot and toss to combine. Drizzle with additional Gourmet Dipping Oil and mix together with cilantro and parmesan cheese. Season with salt and pepper. Serve in large pasta bowl and enjoy.
