Mussels In Red Sauce

Mussels are served in a delectable red sauce featuring our Raspberry Chipotle Salsa.

Ingredients

  • 14.5 oz. Tomatoes, canned, diced
  • 1 tsp. Garlic, minced
  • 1 Tbsp. Red onion, minced
  • Salt and pepper to taste
  • 4 Tbsp. Robert Rothschild Farm Raspberry Chipotle Salsa
  • 2 Tbsp. Butter
  • 3-4 dozen Fresh mussels
  • 1/4 cup Red wine
  • Parmesan cheese, grated
  • Cilantro, minced
  • Directions
    1. Pour 3/4 of the can of diced tomatoes*, garlic, onion, salt, pepper and salsa into a food processor and puree. Reserve remaining 1/4 can of diced tomatoes.
    2. In large pot, melt butter. Add fresh mussels and red wine to pot, cover and cook mussels for 5-7 minutes until mussels have opened. Pour tomato puree and remainder of diced tomatoes over mussels and stir gently to coat.
    3. Remove from heat and pour into large serving bowl. Sprinkle with some fresh grated Parmesan cheese and cilantro – serve immediately.
    4. * To save time, buy the diced tomatoes with onions and garlic and omit those items from recipe.
