Musaka

This wonderful casserole dish features our Raspberry Chipotle Salsa.

Ingredients

  • 2 Tbsp. Olive oil
  • 2 small Yellow onions, diced
  • 1 lb. Ground beef or turkey
  • 5 Tbsp. Robert Rothschild Farm Raspberry Chipotle Salsa
  • Cilantro, minced
  • 1 tsp. Paprika
  • Salt and pepper to taste
  • 7 medium Potatoes, peeled, sliced
  • 2 Eggs
  • 1 cup Milk
  • 1/4 cup Water
  • Directions
    1. Heat olive oil in frying pan. Add onion and sauté until translucent. Add ground beef or turkey and cook until browned. Drain any excess grease.
    2. Add Raspberry Chipotle Salsa, cilantro, paprika, salt and pepper. Stir and cook for 2-3 minutes then remove from heat.
    3. Spray baking pan with cooking spray. Place a layer of sliced potatoes in bottom of pan and season with salt and pepper. Add 1 layer of meat mixture over potatoes. Repeat for 3 more layers.
    4. In small mixing bowl, whisk together eggs, milk and water. Pour egg mixture over meat and potatoes. Bake covered in 375 degree F oven for 1 hour or until all the potato layers are fork tender.
