Maple Bleu Scallop Spinach Salad

A delicious salad featuring baby spinach, walnuts, scallops, bacon, mandarin oranges and Maple Balsamic Dressing with Bleu Cheese.

Ingredients

  • 2 cups Baby spinach
  • 1/4 cup Walnuts
  • 12 Scallops
  • Salt and pepper to taste
  • 6 slices Bacon, diced
  • 1/4 cup Mandarin orange pieces
  • 1/4 cup Robert Rothschild Farm Maple Balsamic Dressing with Bleu Cheese
  • Directions
    1. Cook bacon in pan till 2/3 done. Add scallops and season with salt and pepper.
    2. When scallops are done and bacon is crisp, remove from heat and stir in Maple Balsamic Dressing with Bleu Cheese.
    3. Place remaining ingredients on a platter and top with scallop mixture.
