Mahi Mahi Topped with Basil Tomatoes

A wonderful Mahi Mahi and tomato combination with the exquisite taste of our Basil Oil Infused with Fresh Basil.

Ingredients

  • 4 filets Mahi Mahi
  • 1 Tbsp. Robert Rothschild Farm Basil Oil Infused with Fresh Basil
  • Salt and pepper to taste
  • 1 cup Red cherry tomatoes, halved
  • 1 large Yellow tomato, diced
  • 1/4 cup Red onion, diced
  • 2 Tbsp. Robert Rothschild Farm Basil Oil Infused with Fresh Basil
  • Salt and pepper to taste
  • Directions
    1. Brush Mahi Mahi filets with Basil Oil and season with salt and pepper. Place on a hot grill and grill on both sides 3-4 minutes. Finish cooking in a 350 degrees F oven for 5-7 minutes depending on thickness of fish.
    2. Meanwhile, mix the red and yellow tomatoes along with red onions together in a medium bowl. Drizzle in the Basil Oil and season with salt and pepper.
    3. To serve, place a filet of Mahi Mahi in the center of a plate or over top of a nice rice pilaf. Spoon basil tomato mixture over top of the fish filet.
