Lentil Rice

A perfect rice side dish featuring our Roasted Red Pepper & Onion Dip & Relish.

Ingredients

  • 2 Tbsp. Butter
  • 1 can Lentils
  • 1/2 cup Robert Rothschild Farm Roasted Red Pepper & Onion Dip & Relish
  • 1/4 cup Vegetable or chicken stock
  • 1/2 tsp. Tumeric
  • 1/2 tsp. Cumin
  • 1 cup Wild and brown rice mix, cooked
  • Salt and pepper to taste
  • Directions
    1. Melt butter in a medium saucepan. Add lentils, Roasted Red Pepper & Onion Dip & Relish, stock, tumeric and cumin. Cook for 3-4 minutes over medium heat while stirring constantly. Add cooked rice and season with salt and pepper. Continue cooking for an additional 2 minutes.
