Lemon Zest Cake

A zesty cake recipe made with our Gourmet Pancake & Waffle Mix.

Ingredients

  • 7 Eggs, separated
  • 1/4 tsp. Cream of tartar
  • 2 1/3 cups Robert Rothschild Farm Gourmet Pancake & Waffle Mix
  • 1 cup Sugar, heaping
  • Zest of 1 lemon or orange, grated
  • 3/4 cup Water
  • Directions
    1. Separate eggs and beat whites with cream of tartar until stiff. Mix remaining ingredients well and then fold into egg whites. Blend carefully and pour into tube pan. Bake at 350 degrees F for 1 hour.
