Lamb Fajitas

A wonderful fajita recipe containing lamb steak, red onion, green pepper, red pepper, avocado, sour cream and Cilantro Lime Salsa.

Ingredients

  • 1 Lamb steak
  • 3 Tbsp. Olive oil
  • 2 Tbsp. Lime juice
  • 1 large Red onion, sliced
  • 1 Green pepper, julienne
  • 1 Red pepper, julienne
  • 1 Avocado, pitted, diced
  • 1 cup Robert Rothschild Farm Cilantro Lime Salsa
  • 1 cup Sour cream
  • As desired Flour tortillas
  • Directions
    1. Marinate steaks in a plastic bag with oil, lime juice, red onion and salt and pepper for 1-2 hours.
    2. Grill steak until desired doneness. Add remaining marinade ingredients to saute pan and saute with other onions and peppers.
    3. Mix avocado and 1/2 Cilantro Lime Salsa together to create guacamole. In tortilla, add steak, onions and peppers. Top with sour cream, guacamole and Cilantro Lime Salsa.
