Irish Soda Bread

A traditional Irish bread recipe is perfect served with our Red Raspberry Preserves.

Ingredients

  • 2 2/3 cups Flour, whole wheat
  • 1 cup Flour, unbleached
  • 1 tsp. Salt
  • 1 tsp. Baking soda
  • 2 Tbsp. Sugar
  • 4 Tbsp. Butter, unsalted, cold
  • 2 cups Buttermilk
  • Robert Rothschild Farm Red Raspberry Preserves
  • Directions
    1. Preheat oven to 375 degrees F. Butter an 8 inch round cake pan with 2 inch sides.
    2. In a large mixing bowl, stir together both flours, salt, baking soda and sugar.
    3. Using a pastry blender, cut in the butter until small pieces are well distributed. Pour in the buttermilk and stir in until the dough comes together. This should be wet dough. Turn out onto a floured board. With a gentle touch, knead the dough about 10 times.
    4. Place in a prepared pan, and push dough gently to fit pan. Score dough into quarters and very lightly dust with flour.
    5. Bake in a preheated oven for 50 minutes or until toothpick comes out clean. Cool in pan about 10 minutes and then remove to a cooling rack.
