Irish Colcannon

A delectable, traditional Irish dish featuring our Horseradish Mustard.

Ingredients

  • 2 lbs. Russet potatoes
  • 3 large Garlic cloves, skins left on
  • 1/4 cup Butter, melted
  • 1/3 - 1/2 cup Robert Rothschild Farm Horseradish Mustard
  • 5 slices Bacon, chopped
  • 1 1/2 cups Cabbage, chopped
  • Salt and freshly ground pepper to taste
  • Directions
    1. Place potatoes and garlic in a saucepan. Cover with cold salted water and bring to a boil.
    2. Reduce heat, and simmer about 25 minutes or until potatoes are tender. Drain. Remove skins from potatoes and garlic.
    3. Mash potatoes and garlic in a large bowl, fold in melted butter and Horseradish Mustard.
    4. In a large saute pan, fry bacon until almost done. Add the cabbage and saute until the bacon is cooked and crisp.
    5. Using a slotted spoon to drain the grease, add bacon and cabbage to the potatoes. Fold into the potatoes, correct the seasonings and serve warm.
