Huevos Mangos

A tasty delicious recipe featuring tortillas, eggs, Monterey Jack cheese and our Mango Salsa.

1. Brush both sides of each flour tortilla with a little vegetable oil. Place on a baking sheet and bake in a 350 degrees F oven for 3-4 minutes. Flip and cook another 3-4 minutes, then remove from oven.
2. You will probably need to cook eggs in separate batches. First, pour 1/2 jar of Mango Salsa into a large frying pan. Cook for 2-3 minutes, then make 3 holes in the salsa. Crack an egg into each hole, cover frying pan with lid and cook for 2-3 minutes until egg is cooked.
3. To serve, use a spatula to scoop out egg and surrounding salsa. Place on top of crispy warm tortilla. Top with a little shredded Monterey Jack cheese if desired.
