Ginger Wasabi Chicken & Rice Bake

This chicken and rice bake recipe features our Ginger Wasabi Teriyaki Marinade & Simmer Sauce.

Ingredients

  • 2 Tbsp. Vegetable oil
  • 1 lb. Chicken breast, cut in pieces
  • Salt and pepper to taste
  • 1 cup Robert Rothschild Farm Ginger Wasabi Teriyaki Marinade & Simmer Sauce
  • 2 cups Water
  • 1 cup Rice
  • 1 1/2 cups Broccoli florets
  • 1/2 cups Carrots, sliced
  • 1 cup Shiitake or button mushrooms, quartered
  • Directions
    1. Heat oil in a large skillet. Season chicken with salt and pepper. Add chicken to skillet and cook until lightly browned on all sides. Add Ginger Wasabi Teriyaki Marinade & Simmer Sauce, bring to a boil, and then reduce to simmer and cook for 15 minutes.
    2. Remove chicken and add water and rice to simmer sauce. Stir well. Mix in the broccoli, carrots and mushrooms.
    3. Place chicken on top of the mixture, cover and let simmer for 15-20 minutes until rice is fully cooked and has absorbed most of the liquid.
