Ginger Peach Scones

Our Peach Pie Jam adds some tasty flavor to this scones recipe.

Ingredients

  • 2 cups Flour
  • 2 tsp. Baking powder
  • 1/2 tsp. Salt
  • 1/4 cup Sugar
  • 1 tsp. Ground ginger
  • 1 stick Butter, unsalted, cold
  • 2 extra large Eggs, beaten
  • 1/2 cup Robert Rothschild Farm Peach Pie Jam
  • 1 tsp. Vanilla extract
  • 2 Tbsp. Heavy cream
  • Coarse sugar
  • Milk
  • Parchment paper
  • Directions
    1. Sift together first 5 dry ingredients. Cut cold butter into pieces and add to dry ingredients. Add eggs, Peach Pie Jam and vanilla and stir until just blended. If dough appears dry, add small amounts of milk until forms a ball.
    2. After all ingredients have been combined, place the dough on a well-floured surface. Pat into a 1 inch circle. Cut into wedges or desired shapes. Brush with cream. Sprinkle with coarse sugar. Place on parchment lined baking sheet and bake at 400 degrees F for approximately 14 minutes or until lightly browned.
