German Potato Salad

This German-style potato salad features potatoes, bacon, apple cider vinegar, green onion and our Horseradish Mustard.

Ingredients

  • 2 lbs. Red skin potatoes
  • Salt
  • 3 slices Bacon
  • 1 1/2 Tbsp. Flour
  • 1 Tbsp. Sugar
  • 3 Tbsp. Robert Rothschild Farm Horseradish Mustard
  • 1/2 cup Water
  • 3/4 cup Apple cider vinegar
  • Salt and pepper to taste
  • 1/4 cup Green onion, chopped
  • Directions
    1. Bring potatoes to a boil in a large pot of salted water. When potatoes are fork tender, remove from water, drain and cool slightly. Cut potatoes into smaller pieces.
    2. In a saute pan, fry the bacon slices until browned and crispy. Remove and reserve bacon fat. Whisk the flour, sugar, Horseradish Mustard, water and vinegar into flour roux. Season with salt and pepper.
    3. Pour mixture over the warm potatoes. Add green onions and chopped bacon. Toss potatoes to evenly coat with warm dressing. Serve immediately.
