Fruit Filled Muffins with Seedless Red Raspberry Preserves

A great muffin recipe featuring our Seedless Red Raspberry Preserves.

Ingredients

  • 2/3 cup Milk
  • 1 Tbsp. Vegetable oil
  • 1 Egg
  • 2 cups Baking mix
  • 2 Tbsp. Sugar
  • 1/4 cup Robert Rothschild Farm Seedless Red Raspberry Preserves
  • 2/3 cup Powdered sugar
  • 3-4 tsp. Water
  • Directions
    1. Grease bottoms of 12 medium muffin cups. Stir milk, oil and egg in medium bowl until well blended. Stir in baking mix and granulated sugar just until moistened. Divide batter evenly among muffin cups. Drop 1 level teaspoon of Seedless Red Raspberry Preserves onto center of batter in each cup.
    2. Bake 13-18 minutes. Cool slightly; remove from pan. Mix powdered sugar and water until smooth, drizzle over warm muffins. Yields 12 muffins.
