Fiery Raspberry Appetizer

This appetizer, perfect with tortilla chips, features our Raspberry Chipotle Salsa.

Ingredients

  • 2 Chicken breasts
  • 2 Tbsp. Oil
  • 1 tsp. Garlic powder
  • 1 Tbsp. Peppercorn, freshly ground
  • 1/2 cup Swiss cheese, shredded
  • 1/2 cup Cheddar cheese, shredded
  • 3/4 cup Robert Rothschild Farm Raspberry Chipotle Salsa
  • Robert Rothschild Farm Tortilla Chips
  • Directions
    1. Use a large pasta bowl (oven safe) and place chips generously to fill bowl. Sprinkle with Swiss and cheddar cheese. Set aside.
    2. Cut chicken into strips – sauté in oil, garlic and pepper. Place chicken on chips and cheese. Put in 350 degrees F oven until cheese begins to melt. Remove and add scallions, Raspberry Chipotle Salsa and serve.
