Corn Fritters

These tasteful little corn fritters are made all the better with the inclusion of our Onion Blossom Horseradish Dip.

Ingredients

  • 2 Eggs
  • 1 1/4 cups Flour
  • 1 tsp. Baking powder
  • 2 tsp. Sugar
  • 1/2 tsp. Salt
  • 1/4 tsp. Black pepper
  • 1/3 cup Milk
  • 2 Tbsp. Robert Rothschild Farm Onion Blossom Horseradish Dip
  • 1 can Yellow or sweet corn kernels
  • 1 Jalapeno, minced
  • Sunflower or vegetable oil for frying
  • Maple syrup or honey
  • Directions
    1. In a large mixing bowl, combine the eggs, flour, baking powder, sugar, salt, pepper, milk and Onion Blossom Horseradish Dip – mix well. Fold corn kernels and minced jalapeno into mixture.
    2. Heat oil in deep frying pan to 350-375 degrees F. Using a spoon, drop corn fritter batter into hot oil. Fry until golden brown on both sides, approximately 2 minutes per side.
    3. Place fritters on a plate and drizzle with maple syrup or honey.
    4. For a savory corn fritter, add your favorite herb and reduce the sugar to 1 teaspoon.
