Chocolate Strawberry Espresso Parfaits

These parfaits are even better with the addition of our coffee-flavored Chocolate Espresso Dip.

Ingredients

  • 1/2 lb. Mascarpone cheese
  • 3 Tbsp. Confectioner's sugar
  • 1 1/2 Tbsp. Marsala wine
  • 1 tsp. Vanilla extract
  • 2 cups Whipped cream
  • 1 package Ladyfingers cookies
  • 1 jar Robert Rothschild Farm Chocolate Espresso Dip
  • 2 cups Fresh strawberries, sliced
  • Directions
    1. In a large mixing bowl, whisk together the mascarpone cheese, sugar, marsala wine and vanilla extract together until smooth with hand mixer. Fold in 1 cup of whipped cream into cheese mixture.
    2. Place a small spoonful of cheese mixture in bottom of parfait glass (or small glass bowls). Place a layer of broken ladyfinger cookies in next on top of cheese mixture.
    3. Heat Chocolate Espresso Dip in a microwave for 10-15 seconds. Drizzle some Chocolate Espresso Dip over the ladyfingers. Top with some sliced strawberries. Repeat to add another layer.
    4. Top each parfait with remaining whipped cream and dust with some cocoa powder. Garnish with a slice of strawberry.
