Chocolate Raspberry Truffles

These devilishly addictive truffles are made with bittersweet chocolate, heavy cream, puffed rice cereal and our Red Raspberry Preserves.

Ingredients

  • 4 oz. Bittersweet chocolate, broken into pieces
  • 2 Tbsp. Heavy cream
  • 1/3 cup Robert Rothschild Farm Red Raspberry Preserves
  • 1 cup Puffed rice cereal
  • Directions
    1. Line a baking sheet with waxed paper.
    2. Place the chocolate and cream in a small saucepan set over low heat. Carefully melt the chocolate, stirring to blend with cream. Remove from heat and stir in the Red Raspberry Preserves. Mix until blended, then fold in the rice cereal.
    3. Spoon mixture by tablespoon onto a baking sheet. Chill the truffles in the refrigerator for several hours, or overnight.
    4. To serve, place each truffle in a small paper muffin cup. Yields 18 candies.
