Chocolate Cupcakes

Gourmet Pancake & Waffle Mix can be used for anything - even these chocolate cupcakes.

Ingredients

  • 2 oz. Chocolate squares, unsweetened
  • 1/4 cup Shortening
  • 3/4 cup Sugar
  • 2 Eggs
  • 1 tsp. Vanilla
  • 1 cup Robert Rothschild Farm Gourmet Pancake & Waffle Mix
  • 1/2 cup Milk
  • Directions
    1. Melt the chocolate over low heat and cool. Cream the shortening and the sugar. Add the eggs one at a time and beat until light. Stir in chocolate and vanilla. Add Gourmet Mix to the chocolate mixture alternating between the milk.
    2. Spoon the batter into cupcake pans lined with paper liners. Bake at 375 degrees F for 15-18 minutes, or until a toothpick inserted into the center of a cupcake and comes out clean.
    3. Let cool for 5 minutes then remove from pan and cool completely. Makes approximately 12-18 cupcakes.
